The pork loin is located next to the pork ribs. The area closest to the head is used to make the loin head.
ELABORATION
The whole loin is placed in natural pork casing and undergoes a natural curing process.
CONSUMPTION
A very traditional taste. Very juicy and carefully selected pieces so that they retain all their traditional flavour.
